Aussie/Russian Salad
Inspired by my co worker who bought in
Russian Salad to work, it was delicious. I've made my own
version.

Ingredients

Potatoes (cooked and diced)
Hard Boiled Eggs (diced)
Cucumber Pickles (diced)
Grated Cheese
Onion (diced)
Mayonaise
Garlic Sauce


Method

Quantities are up to you. Put as little or as much as you like in.
I prefer to dice everything small. My husband likes bigger chunks of potato
to the other ingredients.
I use low fat mayo and a delicious garlic sauce I get from the farmers market.
You can use any creamy dressing you like.

I also added diced salami to mine, but hubby does not like it. The version I had, had diced carrot
and salami in it.

Banana White Chocolate Muffins
Ingredients
3 very ripe bananas
125ml vegetable oil
2 eggs
250g plain flour
100g caster sugar
½ teaspoon bicarbonate of soda
1 teaspoon baking powder
150g white chocolate (or butterscotch or dark chocolate morsels)
Preheat the oven to 200ÂșC/gas mark 6 and line a 12-bun muffin tin with muffin papers.
Mash the bananas and set aside for a moment.Pour the oil into a jug and beat in the eggs.
Put the flour, sugar, bicarbonate of soda and baking powder into a large bowl and mix in the beaten-egg-and-oil mixture, followed by the mashed bananas.
Fold in the white chocolate morsels, then place equal quantities in the prepared muffin tin and bake in the oven for 20 minutes.
